I don't have any plans for such an example. I feel it's more a content thing and a game specific thing to be honest.
Yes, I know some of the current tutorials aren't exactly broad in scope - but that's simply because they were low cost to add.

I'd be interested to hear other peoples opinions...

I don't see why an small outdoor or indoor example will make. In fact I don't get what you are asking. Maybe I miss something.

But if you want my opinion in what sort example would be great, post processing effects. I jhaven't look into it yet but DOF seems easy to recreate in xen or just motion blur, cel shading and such others post processing effects. It shows how to use custom shader in a different way than material.

Can we use specular mapping or reflection mapping ?

Because the shadow mapping is a really a great example but I guess for someone not really experimented it can be confusing in some part.

Are you using differed rendering
